Beetroot Salad…

Beetroot salad

What you’ll need-

  • Beetroot cubed
  • Red Bell Pepper
  • Cucumber

Preparation-

Chop up your beetroot, it is totally up to you if you want it from the jar (pickled) or fresh, chop the pepper and some cucumber, throw in a bowl and enjoy as a snack or post workout!

I found this was gorgeous as it was, but you can add a tiny amount of salt if you wish to! 🙂

Parma Ham cups & Salad…

What you will need-

  • 3 Pieces of Parma Ham
  • 1 Ball of Mozzarella
  • 1 Handful of Mixed Leaf Salad
  • 1 Tomato
  •  A drizzle of Sweet Chilli Sauce

Preparation-

Grease a muffin tin with a little bit of olive oil and line each with the parma ham! Pop into the oven for about 8 minutes on a medium- high heat. Once it looks like it would stand on it’s own take out and place on the side, then fill the parma cups with nearly all of the mozzarella ball, evenly in each. Place back in the oven until the mozzarella has melted, then remove from the oven and place on a wire rack to cool.

Next, make up your salad by taking out the handful of salad, mix it with sweet chilli and then top with the remainder of the mozzarella and tomatoes. It really is as simple as that, probably not my healthiest lunch but I really wanted something different!

Quark dip…

Lunch time

This was my lunch today, I made the dip using Quark, it is soft, unsalted curd cheese and is extremely low in fat thus making it the healthiest dip!

Quark Dip-

  • Quark- 2 Tbsp
  • Cucumber- 2 Tbsp Cubed 
  • Hot Paprika- A pinch (to personal taste)
  • Black Pepper- A pinch (to personal taste)
  • Salt- A pinch (to personal taste)

Preparation-

Chop up the cucumber into cubes and sprinkle the salt on, then mix them into the quark and add the paprika and black pepper, toast and butter the pitta bread, chop up the carrots and tomatoes and that’s it done!

The big dollop of home made peanut butter is optional but great!
