Berry Berry Nut Nut!

Today I decided to have blackberries, strawberries, raspberries and some Almonds! I also sprinkled over a few cacao nibs just for the fun of it!

The fruit is frozen and I find this makes it even more delicious, I always use almond milk as I quite simply love the taste of it!

This is when I can quite honestly say, why would I ever look back, why would I want to not be a Vegan. This world is so full of beautiful things and some of them are in my breakfast bowl.



Morello Cherry Granola Bar Recipe…

What you will need-

  • 3 Cups Porridge
  • 1 Cup Unsweetened Muesli
  • 1 Cup Almond Milk
  • 1 Cup (frozen) Morello Cherries
  • 1/2 Cup Honey
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Ground Ginger
  • 1/2 Tsp Baking Powder
  • Small Pinch Salt

How to make the yummy healthy granola-

Before you do anything, wash your hands and then preheat your oven to around 200°C (fan assisted), now set about putting all your dry mix into a bowl, give it a good mix with your best tools in the kitchen….Your hands of course!

Next, put your honey and almond milk into a separate bowl and using a metal whisk, whisk together until combined. Keep doing it, it may take a while depending on your technique but stick with it you will get there and it will mix in completely, add the Morello Cherries and mix in, let sit for 5 minutes.

Add the liquid mixture to the dry mix and mix fast, so the porridge doesn’t start soaking up the moisture from the honey and almond milk mix too fast and you end up having to add more (not ideal!)

Now find a small tin, line with greaseproof paper and press the mixture in with your fingers ready to go into the oven.

Leave in the oven for around 20 mins on a heat of around 180°C (fan assisted), wait until golden brown and then take out. Once out leave to cool and then divide into 8 yummy bars.

I really love these bars, with the Morello Cherries, they give off a really lovely sour flavour, that seems to really work with the semi sweet oats, they make a great on the go breakfast or even a snack, overall I will definitely be making these again and next time I will try with different fruit.

Hazelnut Granola Recipe..

What you will need-

  • 250g Porridge Oats
  • 20g Butter (low fat)
  • 40g Brown Sugar
  • 40ml Honey
  • 45g Chopped Hazelnuts


First measure out all your ingredients, (trust me, it makes things easier in the long run!)  Then get yourself out a medium sauce pan, put the butter in on a low heat, let it melt and then add your sugar and honey in at the same time! Let the sugar totally dissolve in with the butter and mix!

Next, take off the heat and pour into the pan your oats and hazelnuts, now when I say mix, I mean mix until your arm feels positively numb and every single oat looks like it has been covered by the honey, sugar and butter. Remember you are making granola and not flapjacks, so you could be tempted to add more butter being that there wont seem to be enough moisture. Back AWAY from the granola! It will be great! Place onto a piece of greaseproof paper, on a baking sheet and place into a medium heat preheated oven.

The next step is make or break for your granola, keep a close eye for the next 10 minutes, every time you look and the edges have gone brown, take the tray out of the oven and scoop those golden brown edges back into the middle,and evenly spread out again and pop back in, repeat this process until it’s all a light golden brown, (you don’t want it to go dark brown because that will taste bitter…ew!)

Once that’s done, leave to cool down and then put into an airtight container, enjoy with Greek yoghurt and strawberries, as shown below!
