Vegan Mango and Lime Smoothie / Runny Sorbet!

Mango and Lime Smoothie

  • The juice of half a lime
  • 2 cups Chopped frozen Mango
  • 1 Cup Ice
  • Half cup Pure Mango Juice
  • Half Cup Pure Apple Juice (for sweetness!)
  • As much water as you want but I used about 1 Cup so it was runny but still stayed rather slushy.

Wow, this smoothie was gorgeous. I can imagine myself sitting by the beach sipping on this most definitely because of how refreshing it is, it could easily be a proper sorbet depending on how much water you add to this, I preferred it to be a cross between a smoothie and a runny sorbet!

Literally all you need to do is throw all the ingredients in your blender, mine is a nutri ninja! Super easy!

One for the summer months but with that said equally lovely during the colder days as I had it post workout and it made for a refreshing pick me up, when I was really hot after cardio!

This was really delicious, I minted the peas by using mint sauce but next time I will be making them by using mint leaves or even dried mint herb! I used a mixture of sweet and white potato, it was super filling and I made way too much!

I roasted the potato’s in lemon juice and straight into the oven for 35 mins on a medium through to high heat, for the peas I used frozen and blitzed them in the microwave then smothered them in a tablespoon of mint sauce. Mmm!

Banana and Morello Cherry Smoothie Jar!

  • 2 Bananas- Sliced & frozen (for at least 2 hours)
  • 1 Small Handful Morello Cherries (frozen)
  • 3 Drops Vanilla Essence
  • A Medium Splash Pure Apple Juice
  • 1.5 Pint Water
  • A couple of Morello Cherries to sprinkle on the top!

Vegan friendly!

Prep-

Put your bananas straight into your blender, mine is the Nutri Ninja!

Add your water (you may have to do this in stages), a few drops of vanilla essence and whizz up for a few seconds or until smooth!

Pour that into your jar or bowl, next whizz up your Morello Cherries with the apple juice.

Pour the mixture straight onto the top of the nana mix and sprinkle a few Morello Cherries on top! This is so simple!

Serve immediately and enjoy!

The best blender EVER!

My gorgeous readers, I am back and have so much to tell you, I just got a Nutri Ninja Professional Blender. (Yay!) It is the gift that keeps on giving and I have only had it for one day, the power it has, the smoothies that I produce from it and the minimal washing up unlike jug blenders has got me all amazed!

I am currently changing my lifestyle and also what food I eat at the moment to try to control my PCOS symptoms and so smoothies are going to be playing a big part in that, I could not ask for anything more than this and last night I made a raw tomato soup in it which is currently in the fridge for later!

I cannot wait to show you what food I am currently eating and hopefully you will find my food journey just as interesting as me, the highs and lows and also not eating meat, I have been a meat eater for many many years and I made the decision to stop because of how I was feeling, I am still dabbling in fish so I am not a Vegan yet, but I am trying to slowly work my way into cutting that out too. My PCOS has dramatically changed over the last few weeks and I am pleased to report that my symptoms have dampened down somewhat. Since doing this lifestyle change I have also lost some weight which I am pleased about but I still have a long road ahead of me, but what I will say is the energy that I now have is amazing, I literally jump out of bed, that is what makes me want to carry on and become more lean.

I cannot wait to research a lot more vegan friendly recipes and I have fallen in love with smoothies again because of my new blender, because it actually blends so there are no lumpy bits whatsoever and it blends raspberry seeds…..omg! 😀
