Roasted salmon salad with green beans, watercress, potatoes and a lime sour cream dressing.
What you will need-
- 2 Fillets of Salmon
- Handful of Green Beans
- Handful of Watercress
- 1 Tbsp Sour Cream
- 1 Tbsp Lime zest
- Dash of Lime juice
Roast the salmon in the oven on a baking tray for around 12 minutes on a medium heat in a fan assisted oven until lightly golden brown, next cut your potatoes (new preferably) in halves and cook on a medium heat until soft but firm, whilst cooking the potatoes put the green beans into some boiling water and cook for a few minutes (depending on how al dente you like them)
Make the sauce by mixing the lime zest, juice and sour cream in a bowl with a pinch of salt and pepper and that is it, you are nearly done! Lay the watercress on the plate first, then add the potatoes on top, next pop the green beans on and flake the salmon over with the sour cream sauce drizzled on top!
Was very yummy and I enjoyed it a lot, the lime made it taste so fresh!
