Beetroot Salad…

Beetroot salad

What you’ll need-

  • Beetroot cubed
  • Red Bell Pepper
  • Cucumber


Chop up your beetroot, it is totally up to you if you want it from the jar (pickled) or fresh, chop the pepper and some cucumber, throw in a bowl and enjoy as a snack or post workout!


I found this was gorgeous as it was, but you can add a tiny amount of salt if you wish to! 🙂

      1. I noticed that you have PCOS (from your menu bar). Some say that a low oxalate diet benefits people with PCOS.

        I say this because beets are extremely high in oxalates. Something you may want to look into.

        Still colorful though!
