What you will need-
- 3 Pieces of Parma Ham
- 1 Ball of Mozzarella
- 1 Handful of Mixed Leaf Salad
- 1 Tomato
- A drizzle of Sweet Chilli Sauce
Grease a muffin tin with a little bit of olive oil and line each with the parma ham! Pop into the oven for about 8 minutes on a medium- high heat. Once it looks like it would stand on it’s own take out and place on the side, then fill the parma cups with nearly all of the mozzarella ball, evenly in each. Place back in the oven until the mozzarella has melted, then remove from the oven and place on a wire rack to cool.
Next, make up your salad by taking out the handful of salad, mix it with sweet chilli and then top with the remainder of the mozzarella and tomatoes. It really is as simple as that, probably not my healthiest lunch but I really wanted something different!
